I think my favorite cuisine is Italian and in a close second is Mexican. One of my favorite Mexican dishes is the tostada. I want to share a Tostada HELLO FRESH recipe with you, which I will top off with the guacamole dip I made.
The HELLO FRESH recipe is Beef and Cheese Tostadas with long green pepper, tomato salsa, and hot sauce crema.
The HELLO FRESH recipe ingredients:
- 1 Roma tomato
- 1 yellow onion
- 1 long green pepper
- 1 teaspoon of hot sauce
- 1 tablespoon of Southwest spice blend
- one packet of beef stock concentrate (I believe that translates to 1 tablespoon of beef stock)
- ¼ of a cup of Mexican cheese blend
- 4 ounces of cilantro
- one lime
- 4 tablespoons of sour cream
- 10 ounces of ground beef
- 1 teaspoon of chili powder
- four tortillas
First step in preparation: preheat the oven to 450°
Next steps:
Dice the tomato.
Roughly chop the cilantro.
Halve and peel the onion.
Thinly slice one of the Halves of onion.
Finely chop the remaining onion until you have 2 tablespoons.
Quarter the lime.
Cut the green pepper in half, and then core. Then thinly slice the green pepper into strips.
In a medium bowl, combine the tomato, cilantro, chopped onion, juice from half of the line, and a pinch of salt and pepper.
In a small bowl, combine the sour cream with as much hot sauce as you like. Stir in water 1 teaspoon at a time until the mixture becomes a drizzling consistency.
Season with salt.
Heat a drizzle of olive oil in a large pan over medium-high heat, and add the ground beef.
Add the beef Southwest spice, chili powder, and a few big pinches of salt.
While cooking break the meat up into pieces until browned for five minutes
Once the beef is browned, add the green pepper, sliced onion, and a pinch of salt to the pan.
Cook, stirring until veggies are tender and beef is cooked thoroughly for approximately 5 to 7 minutes.
Add the Beef stock concentrate and 1/4 cup water. Simmer until thickened for approximately 1 to 2 minutes.
Season with salt: remove pan from heat and set aside.
Drizzle the tortillas with ½ a tablespoon of olive oil; brush or rub to coat all over. Arrange the tortillas in a single layer.
Bake on the top rack, flipping halfway through until lightly golden
brown approximately for 4 to 5 minutes (2-3 minutes per side).
