Guacamole

I may be a lifelong cook, but I am no chef. I said I would share with you recipes that I discovered and thought were terrific, and here’s another one.

Guacamole Recipe

  • 4 medium ripe avocados, halved, seeded, peeled, and cut up.
  • 3 large green onions cut up.
  • 2/3 of a cup of diced tomatoes and green chilis
  • 2 tablespoons of parsley
  • 2 tablespoons lemon juice or lime juice
  • 2 cloves garlic, minced.
  • half a teaspoon of salt
  • pinch of pepper
  • tortilla chips

I combined the avocados, onions, chili peppers and tomatoes, parsley, lemon juice, garlic, and half a teaspoon of salt and a pinch of pepper in my food processor. I blended the mixture until it was smooth, scraping the sides, as necessary. Salt-and-pepper to taste. Serve with chips.

4 medium avocados and 3 large green onions
Cut up the green onions.
Halved, seeded, peeled, and cut up avocados.
I placed the avocados in my food processor.
I added the chopped green onions.
I added the diced tomatoes and green chilis.
Next I added the parsley.
Next the lemon juice was added to the food processor.
I added 2 minced garlic cloves.
I both ran the food processor and pulsed the ingredients.
Finished
The Guacamole looks beautiful and was delicious.
The Guacamole is delicious spread on sandwiches and toast as well as munching on chips.
This is the cookbook that I got the original recipe from for the guacamole that I made. Please notice the yellow sticker that’s stating that all recipes are new. I purchased this book back in 2002, but I still haven’t tried everything.
I didn’t have all of the ingredients that the original recipe called for, so I improvised. For example, the recipe called for a small onion; since I didn’t have a small onion, I used three large green onions. It was delicious! I think I will use that replacement again in the future.
