I found the following recipe, Peanut Butter Muffins, from the Doggy Desserts cookbook by Cheryl Gianfrancesco, page 94.
Peanut Butter Muffins
Ingredients:
- 1 3/4 cups whole wheat flour
- 1 cup milk
- 1/4 of a cup of honey
- 1/2 a cup of all-natural peanut butter (no salt or sugar added)
- 1/4 of a cup vegetable oil
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- 2 eggs
- 1 teaspoon baking soda
Steps:
- Mix all the ingredients until blended; then beat the batter for two minutes.
- Spoon the batter into muffin cups, 3/4 full.
- Bake at 350° for 18 to 20 minutes.
- The muffins are completely baked when a toothpick inserted in the center comes out clean.
- Let them cool, and then remove them from the pan.
Yield: approximately 12 muffins
