Peanut Butter Muffins

Ingredients:
  • 1 3/4 cups whole wheat flour
  • 1 cup milk
  • 1/4 of a cup of honey
  • 1/2 a cup of all-natural peanut butter (no salt or sugar added)
  • 1/4 of a cup vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 1 teaspoon baking soda
Steps:
  1. Mix all the ingredients until blended; then beat the batter for two minutes. 
  2. Spoon the batter into muffin cups, 3/4 full. 
  3. Bake at 350° for 18 to 20 minutes. 
  4. The muffins are completely baked when a toothpick inserted in the center comes out clean. 
  5. Let them cool, and then remove them from the pan.

Yield: approximately 12 muffins

I divided each muffin into thirds (1/3 for each dog) and then topped each with a small scoop of homemade vanilla ice cream.
