Thanksgiving 2020 Style

Thanksgiving, a traditional holiday for a family gathering, was very different this year. Instead of our entire family gathering together, Jim and I and Teddy spent the day by ourselves. Focusing on what matters most, I am grateful that no one in my family has COVID-19.

I am grateful for our ability to connect via FaceTime and other social media communication tools. Our grandkids are so cute, and they love to do cute little things for the camera!

We purchased a complete Thanksgiving Holiday meal from HelloFresh to prepare. Several companies offer thorough meal preparation like this, but our son and daughter-in-law recommended HelloFresh, so we thought we’d try it. It was a lot of work, but the results were fabulous. Before this experience, I would have told you that I was a pretty good cook. However, this was a learning experience, and I was combining ingredients that I would have never thought to combine before. There were no shortcuts, and I bragged afterward that I felt like a pro like Jim’s grandmother. Jim’s grandmother was an excellent cook!

There was a separate recipe for each item on the menu. A total of six recipes. What had I gotten myself into?

Mistakes were made, but Jim and I worked together and amazingly everything was delicious! It was quite an experience.

The pink clouds are a soft backdrop for the towering pines.

After all of the work, we were able to reflect on all of the things we are grateful for.

Wishing you and your family a Happy Thanksgiving!

Nikki, Jim, and Teddy
