Cheesy Turkey Surprise

Are you tired of eating turkey sandwiches with your Thanksgiving leftovers? It’s time to spice things up and get creative in the kitchen! I am sharing one of my recipes, which I named “Cheesy Turkey Surprise,” to make your leftover turkey taste amazing again. Trust me, this is a recipe you want to take advantage of!

Ingredients:
  • 3 cups of shredded turkey leftovers
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 red bell peppers, diced
  • 3 Tbsp Olive Oil
  • 1 can of black beans, drained and rinsed 
  • 1 can of corn, drained 
  • 1 cup of cooked rice
  • 1 cup of shredded cheese 
  • 2-3 chopped fresh tomatoes or 1 can of diced tomatoes 
  • Salt and pepper to taste, and add your favorite spices. I like to add a pinch of Italian Seasoning.
Instructions: 
  1. In a large skillet, sauté the onion, garlic, and red bell pepper until softened.
  2. Add in the turkey leftovers and cook until heated through.
  3. Stir in the black beans, corn, rice, and tomatoes. 
  4. Let the mixture simmer for 5-7 minutes until all the flavors have combined.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture to a baking dish and top with shredded cheese.
  7. Bake at 375°F for 15-20 minutes or until the cheese has melted and is bubbly.
  8. Serve and enjoy your delicious turkey leftovers transformed into a brand-new dish!
Rinse and drain 1 can of Black Beans
Dice 2 Red Bell Peppers
I like to mix my ingredients in a bowl before pouring into my frying pan. Here I mixed the Red Bell Peppers, Onion, garlic, salt and pepper, and Olive Oil.
In a large skillet, I sautéd the onion, garlic, and red bell pepper until softened.
Add in the turkey leftovers and cook until heated through.
I prefer fresh ingredients, but you can use 1 can of diced tomatoes.
Mix ingriedents
Add the black beans, corn, and rice.
Let the ingredients simmer for 5-7 minutes until all the flavors have combined—season with salt and pepper to taste. Add more Olive oil if needed.
Transfer ingredients to a baking dish.
Top with grated cheese. I chose the Fiesta blend of finely shredded Monterey Jack, Cheddar, Queso Quesadilla, and Asadero Cheese. Then I added more Cheddar for good measure. 

Bake at 375°F for 15-20 minutes or until the cheese has melted and is bubbly.

Serve and enjoy your delicious turkey leftovers transformed into a brand-new dish!
