Yummy Mini Peppers

I love roasted mini bell peppers, and this is a simple recipe. Most recipes I found online recommended cutting the peppers in half and seasoning before cooking. My recipe is fast and delicious!

Ingredients:

  • 2 (8 oz) packages of mini peppers 
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Note: Use your preference for seasoning. 

Instructions:

  • Wash the mini peppers in cold water and let drain.
  • Preheat your oven to 400 degrees F. Line a large rimmed baking sheet/cookie sheet with aluminum foil.
  • Place the peppers on a baking sheet/cookie sheet. I leave the stems attached – you can cut them off if you wish. 
  • Bake them on the middle rack until tender, about 20 minutes
  • Place the peppers in a large bowl. Toss them with olive oil, Salt, pepper, and Italian seasoning.
  • Refrigerate or Serve immediately.
Wash the mini peppers in cold water. At the same time, the peppers are draining; preheat your oven to 400 degrees.
Cover a cookie sheet with aluminum foil and place your plump little mini peppers in rows on the cookie sheet. Then place the cookie sheet in the oven on the middle rack for 20 minutes.
Place the peppers in a large bowl. Toss them with olive oil, Salt, pepper, and Italian seasoning.

The roasted mini peppers are an excellent accompaniment to almost any meal, and the leftovers are delicious hot or cold.
