Rocky Road Ice Cream

Yesterday I made Rocky Road ice cream for my husband, Jim, in honor of his mother, Nonni. Rocky Road ice cream was Nonni’s favorite ice cream.

Ingredients:
  • 1 cup of unsweetened dark cocoa powder
  • 1 cup of white sugar
  • 1 1/4 cups of whole milk
  • 3 cups of heavy cream
  • 1 tablespoon of pure vanilla extract
  • 1 cup of chopped walnuts
  • 1 cup of mini marshmallows
Instructions:
  1. Combine the cocoa and sugar using your stand mixer in a mixing bowl, and stir until evenly combined. Add the whole milk, and mix until the cocoa and sugar are fully dissolved.
  2. Stir in the vanilla extract in the heavy cream. Stir thoroughly until all ingredients are evenly blended. Place the mixture in the refrigerator for one to two hours.
  3. Take the ice cream freezer bowl out of the freezer and set it up on your stand mixer.
  4. Pour the Rocky Road ice cream mixture into the ice cream maker attachment bowl.
  5. Set the stand mixer’s speed to “Stir” mode.
  6. After approximately 20 minutes (in the last five minutes of the freezing), pour the chopped walnuts and the mini marshmallows into the freezer bowl to let mix completely.
  7. After approximately 25 to 30 minutes (total), the mixture will have frozen to a thick creamy, soft-serve consistency, with every chocolatey scoop packed with marshmallows and walnuts! Serve directly from the ice cream freezer bowl into bowls or cones and enjoy
  8. For a more hard-frozen consistency, transfer the mixture from the freezer bowl into an airtight container and keep it in the freezer for at least two more hours.
