Mint Chocolate Chip Ice Cream

I love ice cream and made Mint Chocolate Chip Ice Cream and Vanilla Ice Cream for Thanksgiving. My homemade ice cream is delicious, but I tried several recipes before settling on the two I want to share with you.

I found both recipes on the Simply Scratch website (see the link below and an image from the website). I have yet to try Laurie’s other recipes, but the Mint Chocolate Chip and the Vanilla Ice Cream are fantastic!

So the first recipe I want to share from the Simply Scratch website is the Mint Chocolate Chip Ice Cream. It is a cool and creamy mint-flavored ice cream with tiny pieces of mint chocolate made from scratch!

Ingredients

  • 1 cup granulated sugar
  • 1 generous pinch of fine sea salt
  • 2 cups heavy whipping cream
  • 2 cups half-and-half or substitute with a cup of both whole milk and heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 6 drops of green food coloring, optional
  • 3/4 of a cup of small chocolate chunks or mini chocolate chips

Instructions 

  1. Add the sugar, sea salt, heavy cream, and half-and-half into a large (8-cup) liquid measuring cup and whisk until the sugar dissolves completely.
  2. Next, add the vanilla, mint extract, 6 drops of green food coloring, and whisk to combine.
  3. Cover and refrigerate for two hours or until thoroughly chilled
  4. Following the manufacturer’s instructions, for the ice cream base, pour the ice cream mixture into the ice cream maker and churn until thick.
  5. Use a spatula to fold in the chocolate pieces and then pour the base into a freezer-safe container and freeze for 4 hours or overnight; overnight is the best.
  6. Scoop and serve

The Mint Chocolate Chip ice cream is exceptionally delicious.
